The festival of zappueddus and sartizzu arrustu
Zappueddus (or Sappueddus, also called spizzua and ghetta) are a rustic pasta shape originating from Southern Sardinia, in particular from the Sulcis-Iglesiente areas. They were born in peasant cuisine: from the leftover dough of durum wheat semolina, water and salt (sometimes with lard), pinch it off and immediately “throw” it into boiling water.
Sartizzu arrustu is one of the symbols of Sardinian cuisine. The traditional fresh pork sausage, flavored with various spices, is cooked “arrustu”: placed on a low grill, at close range from burning embers which give it a characteristic scent of Mediterranean woods.
